Tollot-Beaut

(Chorey-lès-Beaune)

Chorey-lès-Beaune is a small town. It lies coming from the north left of Beaune. There is vine growing only on a plane surface and therefore no Permier Crus - but among the Appellations wine you can find some simple and good Burgundy that is just perfect to make one familiar with the world of Pinot Noir. You should ignore this town, because it has some outstanding Domains. One of the best and in Chorey well known is that of Tollot-Beaut & Fils who have a broad variety A few years ago we had been there and bought some bottles. This year they were already sold out - what is happening more and more often with good domains - far too often - everything is already sold out and only wine in barrels is still there before it is filled in bottles for their journey. Perhaps you should stop to write about wine - the amount of good bottles seems to shrink by making recommendations. But good wine wants to be known and at Tollot-Beaut the one in barrels seemed to be one of those that start singing in the mouth.

The very friendly Lise Gachot welcomed us at the domain and guided us through the cellar. Going from barrel to barrel we degustated sectionally from the climates north of Beaune. Everyone of those wines is recommendable, becoming even better and better with every barrel... Wines that mature to perfect examples of Burgundies.

Chorey-lès-Beaune 1998 Barrel sample
Elderberry, fruity, pleasant. Good notes of wood, well balanced play of tannin and acidity.

Savigny-lès-Beaune 1er Cru Lavières 1998 Barrel sample
Richer than the Chorey. Very pleasant aromas. Strawberry jam and dried fruit. Vanilla. Very good tannin, long and sweet finish.

Savigny-lès-Beaune 1er Cru Champ-Chevrey 1998 Barrel sample
A monopol climate of the domain.
In the colour still violet tones. In the fragrance red currant and slight animal notes, also prunes. Perhaps a bit thicker and more structured than the Lavières but being a bit more elegant.

Beaune 1er Cru Clos-du-Roi 1998 Barrel sample
Flours. Geranium and elderberry blossoms. In the mouth, light wood, good sweetness. A fine, but feminine Beaune.

Beaune 1er Cru Grèves 1998 Barrel sample
From one of our preferred climates in Beaune.
Fuller tannin than in the Clos-du-Roi. aromas of dark fruit, especially blackberry. Vanilla and sweetness. Good Beaune.

Aloxe-Corton 1er Cru Les Vercots 1998 Barrel sample
From about 70 years old vines.
Some elderberry and black currant in the fragrance. In the mouth full bodied, strong notes of wood, blueberry, good sweetness, strong acidity. Becomes perhaps a beautiful well balanced, rich Burgundy while maturing.

Corton-Bressandes 1998 Barrel sample
Dark cherry in the colour. In the fragrance elderberry and notes of almonds. In the mouth very rich. Pine needles and resin. Has a bite. Tannin and acidity well balanced. Is going to be very good.

That we could see how the wines develop, again the Grèves, this time 10 years older:

Beaune 1er Cru Grèves 1988
Very open nose. Dark, full and intense. Dark berry and earthy aromas. In the mouth good sweetness. Good integrated wood. Very long. On the tip of the tongue hot. Excellent Beaune from the aristocratic vintage of 1988.
